Travis brings to Baltaire culinary expertise that was shaped by his time cooking at some of Chicago’s best steakhouses, including Chicago Cut Steakhouse and The Local Chicago. Travis’s style and appreciation of farm-fresh ingredients is greatly influenced by the legendary Blackberry Farm in Walland, TN, where he worked after graduating with honors from the Culinary Institute of America.
